In addition to the green beans below, I decided to make this spicy eggplant with pepper and sweet basil. Turns out it is not too hard to make side dishes that go along with Thai curry! :)

I think I have talked before about my love for Thai curry - I love the flavors in it! But I have always struggled with the side dishes while making Thai curry. This time I decided it was time to master some side dishes - no more excuses! I found this easy recipe online, and for once, I had all the raw ingredients needed. And a little while later, I had a skillet full of delicious Thai green beans!

This is my go to dish when we are on a health drive. I add all the vegetables I can find in my fridge, add some spices, cheese and/or paneer. Mix either a tomato based sauce, or a pesto-like sauce and bake it in the oven for 15 - 20 mins.

A few days ago, we went to this Thai place and had some delicious Panang curry with Tilapia. It was the best Thai curry I had ever had. And the fish … slightly crispy on the outside, but oh so soft inside …! I was determined to try this at home! After some research, and shopping for essential ingredients, I stepped into the kitchen.


For the curry, I used a recipe I had for red curry, and made some modifications - added crushed peanuts, kaffir lime, basil, and some extra spice that’s needed to satisfy my taste buds.
I cleaned the fish, added salt and some lemon juice all over. Then lightly dusted it with a mixture of breadcrumbs, flour, salt, red chilli powder and some coriander powder. Now the fish was ready to be fried. 

As you can see it came out perfectly done! A few minutes later, with some sticky rice on the side, we were ready to devour. Mission accomplished!

It has been forever since I had a chance to update this blog. Our house has been full of family and friends visiting, and although that meant a chance to do a lot of cooking, it did not leave me with much time to update this blog.

Today I finally decided that it was time for me to finish those crystallized ginger packets that I bought a while ago now! I love ginger - I use it in almost everything I make, and in addition to the crystallized form, I had fresh ginger and ginger powder as well. So I set about to find a recipe that would indulge my gingery fantasies :)

The internet never lets me down. I found this recipe online and dove into it.

The result - Triple ginger cookies - gingery goodness all the way! My husband likes soft cookies, so I made a batch for him - nice and soft and chewy. Yumm! And then for me, I let it sit a couple of minutes longer in the oven to get that nice crunch when I bite into it. Now for a real good strong cup of coffee to go along with the ginger cookies … !
